Yes, they owe you the value of the jewelry. But their liability could be limited by the wording on your receipt. You might be limited to the amount they paid you. Or for a value that they assign to the piece.
A lot of it will depend on their insurance company. If they have good insurance you will get the full value of your gold. If they close the store and go out of business, you might get nothing.
